Rwanda Lake Kivu – 10 oz
Rwanda is known as “the land of a thousand hills.” Abundant rainfall, high altitude, and lush, rolling landscapes provide ideal conditions for coffee cultivation. Accordingly, Rwanda produces excellent beans, loved for their fresh, vibrant flavors.
Lake Kivu is a 1,000 square mile Great Lake and one of the deepest lakes in the world. It sits atop a rift valley that generates volcanic activity.
The Washed process in this area includes a unique soaking step, similar to that often found in Kenya. The cherries are delivered to central processing units the day they are harvested. They are then depulped and fermented in open-air tanks made of concrete for 12–18 hours. After fermentation, the coffees are soaked in water for 24 hours. They then have their mucilage removed and are spread on raised beds to dry.
